Ingredients:
Ingredients for slow cooker:4lb roasting pork like pork shoulder or pork butt
2 bay leaves
1-2 adobe chilies with some of the juice from the can
3-4 cloves garlic
1/4 cup jalapeno juice
1/4 cup sliced jalapeno
1 medium onion sliced
1 tsp dried oregano
1 Tbs ground cumin
1/2 cup chicken stock (or water and bullion)
salt and black pepper
1 14oz can diced tomatoes
Fixings for Tacos:
Heated tortillas or hard shell tacos
sour cream
cheese
tomatoes
onions
limes

Directions:
Brown all sides of pork roast with some salt and pepper in a large pan with 1 Tbs of oil. Place in slow cooker with all the slow cooker ingredients. Cook on high for 4 hours or low for 8 hours. Take out of slow cooker and shred. Pour some of the liquid over shredded pork (you may have additional liquid left in slow cooker you can serve as extra sauce on the side or discard).
Serve with tacos and fixings as part of a meal.

ReplyDeleteI love the presentation. It is great you let your kids have all the choices. You never know when your son might try the tomatoes again. I hated them as a kid and now I love them!

This pork carnitas looks delicious - tender and tasty! I love topping my carnitas with red chile sauce and eating with a flour tortilla, but then that's no surprise, I'm sure. :) Great recipe!
