2 Minute Pumpkin Caramel Cake in a Mug

Here is another fun dessert in a mug creation.  I think I made a big mistake when I gave this dessert to my husband.  He has asked me to make it for him every night since he first tried it.  Since it only takes a few minutes to put together, I really don't have an excuse to say no.  This fun mug cake makes it feel like Thanksgiving any night of the year.


 Ingredients:
5 Tbs all purpose flour
3 Tbs canned pumpkin puree (plain)
1 Tbs canola oil
1/2 up to1 tsp cinnamon powder
pinch fresh grated nutmeg
1 large egg
1/4 tsp baking soda
1-2 Tbs powdered sugar
caramel syrup (used for ice cream)

garnishes: whipped cream, vanilla ice cream

 Directions:


Mix all ingredients (except caramel syrup) to make a batter.

 Pour into a microwave safe mug that has been sprayed with cooking spray or lightly oiled.  Put in microwave on high for 2 1/2 minutes.  Poke with fork  into cooked cake and pour caramel syrup so it soaks into some of the holes.  Top with whipped cream and/or vanilla ice cream.  Enjoy.

  6. Ok that's it, I have to start making your cakes in a cup. I had been making cakes in a cup for Gabbi using cake mix. I feel better about these.

  10. I have made this stunning seasonal pumpkin dessert today & loved it so much. I used home-made pumpkin puréé because we can't buy it here in Belgium out of a can! :)

  12. Just curious...I don't have a microwave...what would be the oven bake time?

    1. Hi, gosh... I can only guess at this answer. I would suggest trying 350 degrees for 15-20 minutes to see if that bakes it for you. If not, then test it every 5 minutes after that to check to see if a toothpick comes out clean. Hope that helps. :)
