Sausage and Kale Pizza

 Kale on pizza?? Yes, indeed!  My kids and husband loved these quick little pizzas I made for lunch.  I used naan style flat bread topped it with my kale, sausage, pizza sauce and some mozzarella cheese.  Then I heated them in the oven to get crispy and make the cheese melt.   Easy, healthy and quick.  So of you think kale is the last idea for a pizza topping, try this one out.

Ingredients:
1lb Italian sausage (crumbled without casing)
2 cups of shredded kale (no stems)
1 medium onion chopped
mozzarella cheese as needed
pizza sauce as needed
prepared pizza crust or naan
1/8 tsp grated nutmeg
2 cloves garlic grated
red chili flakes to taste
1/4 cup chicken stock (or water and chicken bullion)
1/2 tsp dried basil
1/2 tsp dried oregano
salt and black pepper to taste


Directions:
Heat 1Tbs of canola oil in a large pan.  Add crumbled sausage, onion and garlic.  Saute until sausage browns.  Then add dried oregano, basil, chili flakes, grated nutmeg, salt, black pepper and some chicken stock.  Cook for 3-5 minutes.
Add shredded kale and cook for 5 more minutes until kale is cooked down. Taste for seasoning.  Add salt and seasoning as needed.

Add a light coating of pizza or jarred spaghetti sauce to pizza crust (remember this is a cooked naan or pre-baked pizza crust).  Next add the sausage and kale mixture and cover with shredded mozzarella cheese.   Bake in a 425 degree oven until cheese melts and crust is crispy.  Slice and serve.  Enjoy.

  2. We're huge pizza eaters here so I bet I could get away with this, especially if I tell Dudette it's spinach instead of kale. Of course, she's never tried it so maybe it would go over well. It looks fantastic.

  4. My husband would love this. I would leave the sausage off mine for a nice lite healthy meal. I would have never thought to put Kale on a pizza, but yeah, it makes sense! Thank you for all the wonderful ideas you give us!

  7. Looks awesome! I've been using kale on pizza for a while : I use tortillas or FlatOuts! (diet choice) but mine is quite similar otherwise. So tasty!

  13. Great way to use Kale!! I have three things I make often with kale- potato, sausage kale soup, Kale and white kidney bean pasta and everyone's favorite- kale chips but I need new recipes for kale cause we love it so! I wondered about putting it on pizza and now I have a recipe to try. The little boys I am watching stay for dinner now and I need a healthy recipe they will like. Since they go crazy for kale chips I bet they would like this pizza. Thanks!

  15. Fabulous pizza Ramona! I've never used kale on a pizza, but I have made a Swiss Chard with Italian sausage and loved it. Next times I'm going to have to try it with kale and some of your seasoning. Love the addition of the pepper flakes. Delicious looking pizza! Hope you're having a great weekend!

  16. This is my kind of pizza. I love sausage and kale. We make homemade pizza probably once a week. It is always much better than the restaurant kind. Although we do get that too.
