Ingredients:
3lb of bone-in. You can use any part of the chicken you want, I used the leg here.
1 small onion chopped1-2 green chilies chopped
4-6 green cardamoms
4-6 cloves
10-12 curry leaves (optional)
1 stalk of lemon grass cut and bruised(optional)
small handful of pandan leaves/rampe (optional)
1 (1inch) cinnamon stick
1 tsp of fennugreek seeds
2 cups of water
1 cup of coconut milk or cow's milk
Chicken Marinade:
1 Tbs of minced fresh ginger1 Tbs of minced fresh garlic
1 tsp of turmeric
1-2 Tbs of red chili powder (to taste)
1 (8oz) can of tomato sauce
1-2 Tbs of curry powder (to taste)
Salt and pepper
Directions:Place all ingredients into slow cooker (except for the milk). Set cooker on high for 4-5 hours or low for 8-9 hours. Stir occasionally and taste for seasoning. Add milk in the last hour of cooking. Serve with rice, bread, roti, naan. Enjoy.

What a great idea! My crockpot is also sitting in there collecting dust. Don't use it enough. Would be hard though to wait 8 hours with the curry aroma in the house. Can't blame your kids :)

ReplyDeleteCan you entertain an idiot question about cardamom? Should I smack them a bit to open the pod? Or do they just steam whole in the slow cooker?

Hi John, You can crush them open if you want.. but I usually don't when I put them in to a curry. I just throw them in with the cloves and they steep their flavor into the curry during cooking. But don't ever bite down on them.... I think they taste very strong and will ruin the bite of food. :)
DeleteYep - Curries could be one of those dishes that crockpots were make for. AFter simmer all day in the crockpot, I bet that chicken just fall apart and is SO TASTY! I guess crockpots are called slow cookers now-a-days. :)

ReplyDeleteThis was delicious. Just like traditional south indian chicken curry we have with appam. I replaced the tomato sauce with some Rotel tomatoes and green chili. The meat fell off the bone...yum.
