Ingredients:
2 pound pork loin (lean)
1/2 cup yogurt ( I used Greek style because that's what I had)
1 Tbs Paprika
1 tsp ground cumin
1/2 tsp turmeric
1 Tbs Garam Masala
Salt and Pepper
juice of half a lime
1-2 Tbs of my Ginger/Garlic Paste or 2 cloves of garlic and 1 inch of ginger grated
Directions:
Slather the marinade/paste all around the pork loin and allow to marinate in the fridge for 4 hours to overnight. Take out of the fridge and allow sit on the counter for 20-30 minutes and then put on a baking sheet(cover it with foil for easy clean up) and bake it in a 375 oven for 30-35 minutes until cooked through. Allow it to sit/rest on the baking sheet for at least 10 minutes before slicing. Then slice and serve. Enjoy! Serve with fragrant rice and vegetables.
