Ingredients:
1 cup applesauce
2 tsp vanilla extract
2 cups shredded raw zucchini (see note)
3 large eggs
1 cup all purpose flour
1 cup whole wheat flour
1 and 1/2 cups sugar (or baking splenda)
1/2 cup of unsweetened coco powder
1 tsp salt
1 tsp baking powder
Garnishing:2cups Chocolate Chips
1 cup walnuts (optional)
Notes: You may try to avoid the "ugly" factor of these brownies by peeling the skin and then shredding the zucchini very fine.
Directions:

Make the dry ingredients mixture first. Then make the wet ingredient mixture. Now combine both the dry and wet together with one cup of chocolate chips and nuts. The batter will be thick. Pour batter into
a 9x13 baking pan that is well greased or sprayed with cooking spray. Scatter 1 more cup of chocolate chips over the top of brownie batter. Bake in a 350 degree oven for 30 minutes or until knife comes out clean from center.Spread the melted chocolate chips on the top of the brownies (using a the back of a spoon) to make a light chocolate glaze over the brownies. Allow the brownies to cool at room temperature for 30-45 minutes before cutting. Enjoy.

I don't think it looks ugly. I was drooling at it .. are u kidding me ? The idea of zucchini in cake will not make my husband happy for sure .. but you are right .. health comes first!

ReplyDeleteThey look pretty good to me! I have a dish called "Ann's World Famous Ugly Eggs" (also coined by my hubby) It's basically scrambled eggs with everything - peppers, onions, garlic, ham, cheese & potatoes. They look awful, but taste delicious! It's one of my hubby's favorites.

ReplyDeleteI don't see ugly brownies here. I would eat the brownies. Food doesn't have to look like it belongs in an art gallery to taste good.
ReplyDeleteI don't think they look ugly at all! In fact they look very inviting because they have that slightly dense and uneven look that differentiates brownies from very uniformly textured cake. And how awesome that they're hiding the treasure of such a healthy vegetable too :-)

ReplyDeleteI can't see the green in there so it looks just fine to me. I'm smiling about the name though. I'd probably have to peel the zucchini to get it by Dudette in this recipe. I love that you're sneaking healthy vegetables into everything like this. Good job.

ReplyDeleteIf you use yellow skinned zuccini, you will not see the skin as it goes transparent in color or use grated carrot if you want an even sweeter brownie.... then you will have to change the name though to "most requested brownies"
