My Son's Favorite Birthday Cake

When you are a kid your birthday is the most special day of the year.  The anticipation of your birthday starts from the moment your birthday month starts.  Then the days leading up to your birthday can make you feel simply giddy.  My son just celebrated his birthday and I had a whole week of birthday countdowns, birthday eve celebrations, birthday breakfast, birthday lunch, birthday dinner and of course BIRTHDAY CAKE.   This is his favorite cake and he especially requested that I make it for him after his birthday dinner.  Making this cake for him was simple because I took a lot of help from the store and reaped all the hugs and kisses that he gave me for making his birthday so very special. Score one for Mom! : )

Ingredients:
1 box of yellow or white cake mix
1 20oz can of crushed pineapple with juice
3 eggs
1/2 cup of applesauce
1 brick cream cheese (at room temperature)
1/2 cup sugar (or splenda)
1 tub of cool whip topping
1 can fruit pie filling (cherry, strawberry etc..) 

Directions: 
To make the cake:  mix together the cake mix, eggs, applesauce and the juice from the crushed pineapple.  Once the cake batter is smooth, fold in the crushed pineapple.  Pour batter into a well sprayed 9x13pan and bake at 350 degrees for 30 minutes (or until cake is set).



To make the cheesecake topping:  cream the sugar and cream cheese together until it is fluffy.  Then fold in the cool whip.  Spread the cheesecake topping over the cooled cake and refrigerate for 4-6 hour or overnight.

Before serving add your pie filling on top of the cake.  Slice and Enjoy.
