For the Dry Mix you will need:
2 cups whole wheat flour ( I used pastry flour)
1/2 cup uncooked oatmeal
2 tsp baking soda
2 tsp powdered cinnamon
pinch of salt
For the Wet Mix you will need:
1/2 cup baking splenda or brown sugar (I used baking splenda)
1/2 cup buttermilk
3-4 bananas mashed
1 tsp vanilla
1/2 cup unsweetened applesauce
3/4 cups dried cranberries
1/2 cup coarsely chopped walnuts
Once you stir the batter together, bake in muffin pans for 15-20 minutes at 350 degrees until done (test with toothpick).
I tried several methods when I baked these muffins.
- I first used cupcake liners on their own. This resulted in the muffins being stuck to the liners and only peeled off after allowing the muffins to cool for several hours.
- I then tried spraying the liners with a little bit of cooking spray. This was a bit better, but there still was a lot of muffins sticking to the liner (especially the bottoms).
- Finally I baked these muffins directly in the nonstick muffin tin by spraying them with cooking spray and then lightly dusting each muffin cup with a little bit of flour before pouring the batter. The muffins came right out and looked perfect. This was my favorite method.
