Black Bean and Corn Fiesta Chowder

This is a spicy Mexican Style Soup/Chowder. If you like the flavors of Salsa and Tacos you may enjoy this one too.


Ingredients:
1lb lean ground Chicken or any lean ground meat
1 cartoon Chicken Broth = 4 cups
1 medium sized onion chopped
2 serrano chilies diced
1 can of black beans washed and drained
4oz cream cheese
2 cups salsa 
1/2 tbs cumin powder
3-4 cloves garlic chopped                                                                    1tbs red chili flakes
 6oz frozen corn
                                                                                   
 Directions: 

Heat soup pan with 2 tbs oil. I used Canola oil. Saute' the onions and green chilies


Next add ground meat and saute'  I used ground chicken.  But you can substitute beef or pork if you prefer.


Season with Salt and Pepper to taste. 1/2tbs of ground cumin, 1tbs of red chili flakes and chopped garlic.


 Add 2 cups of salsa and one can of blacked beans and 6oz of frozen or canned corn.


Add Chicken Stock and 2 additional cups of water. Also add the cream cheese and make sure it melts into the soup.  Simmer on stove for 20 minutes. Check seasoning. If you want a punch more "taco" flavor to the soup you can add about a tablespoon of taco seasoning.


This soup is great with some corn or tortilla chips on top. Enjoy. It should serve 8 people.
